Dr. Eshaby Mustafa is an academician in the field of hospitality management, currently serving as a senior lecturer at Universiti Utara Malaysia (UUM). She obtained her undergraduate degree in Hotel Management from Universiti Teknologi MARA and pursued further studies in MSc in Food Management at University of Surrey, United Kingdom. She also holds a PhD in Consumer Behaviour in Food from University of Surrey.
Dr. Eshaby began her career in the hospitality industry as a Front Office Assistant at a resort in Langkawi Island. Her academic journey commenced in 2006 when she joined UUM as a tutor. Her research interests are diverse, including food management, hospitality management, hotel operations, service operations management, and consumer behavior in food and beverage. Dr. Eshaby has been actively involved in organizing and contributing to international conferences and has co-edited several issues related to hospitality and tourism, focusing on food, sustainability and innovation in the industry. She has also published numerous research papers and continues to mentor students and collaborate with industry professionals.
Dr. Eshaby's contributions to the field includes participation in industry conferences and workshops, aiming to bridge the gap between theoretical knowledge and practical application in hospitality management.
